Sunset on the hill

After Jeremy had finished work, he quickly stopped by his friends house to see his new ride that he just got today and then came home to pick Jaiden and I up. We then made our way to the hill top. It's really funny how the suburb is called 'Rooty Hill' and it actually had a 'hill', so yes, we went to 'Rooty Hill hill' lol.

There we met up with Jeremy's friends and they were just kicking the ball around, Jaiden was getting pushed around on his bike and he joined his daddy when fetching the ball. We didn't stay too long because Jaiden was started to continuously cough. We went just when the sun had just set. We managed to get good photos with the sunset.

Definitely cannot wait until Spring weather. More days in the park and more days outside enjoying the lovely sun.



3 in 1 birthdays

On Saturday we went to lunch to celebrate Mother-in-law's, sister-in-law's and grandma-in-law's birthday. If you're a new follower, you might not have known that these ladies share the same birthday.

We had our lunch at The Bavarian Bier Cafe in Parramatta, together with the kids. Yes, they were allowed (obviously). Jeremy had his usual 1L mango beer, we were supposed to be sharing but I didn't feel like anything but just water lol. There were a few of us that got the platter which was so yum! Too bad I couldn't finish all of it :( I should've taken it home cos I'm really wanting some now lol.

Girls, cocktails and music

Friday night after work, I had a girls night out with my main girl friends Stacee, Kaecee and Jess. We started the night out at the Docks Hotel along Darling Harbour, where we had finger foods - Prawn pizza and wedges and cheap cocktails! Lucky for us, the venue had 1/2 priced cocktails from 8-10pm and since we got there at 9:30pm we just made it on time and got two each. We had different flavours ranging from Toblerone, Cosmopolitan, Midori splice, Fruit tingle and Moscow Mule.

After around 2 hours of chilling, talking, eating, drinking and having laughs, our friend Jo met us at Docks and then made our way to the other side of the harbour to Pontoon, the club. Lucky we didn't need to line up because I knew one of the managers there and we got let in straight away, the line was pretty long. Inside we met a few other friends and then got ourselves settled down, with two jugs of drinks, which was pretty convenient so we didn't have to make trips.

The club wasn't as good as it was the last two times I went there. At the end of the night we agreed to try a new club where there were new people and new scenery. You could say 'a non-Asian' club. But that won't be until a while. For now, we agreed to just stick to cocktails and dinner, where we had more fun at.

We still had a good time with each other's company. Which is what matters most ♥

Painting

Today we bought Jaiden a couple of canvases, painting apron and 'My First' Crayola art set, which he even picked out himself! If he hadn't ran to it and told us to look, I wouldn't have have seen it and would've just gotten paint on its own. He was so excited when he saw his daddy carrying it, he wanted to carry it himself but was obviously too heavy and big lol.

When we got home, we changed him into some clothes that were okay to get paint on, put on his painting apron, put on a blob of paint on the canvas in each colour and then gave it to Jaiden to get started on it.

At first when he felt the paint, he was continuously looking at his hands and the paint, thinking 'what is this?' haha. I don't think he liked the feeling of it being all gooey and all. So I got his paintbrush and he was a lot happier with it. He actually painted with it, stroking it across the canvas and making dots with it. He even put paint all over my legs and started painting on me haha.

He even walked away, looked at something, come back and paint and then do it all over again. It was as if he was getting inspiration from something haha it was so cute. The canvas is now sitting on our verandah drying up. We'll be giving the canvas to Jeremy's mum as a birthday present, next weekend. Which was the whole point of doing it in the first place. I hope she likes it.

Tomorrow, I'm getting Jeremy to have Jaiden paint or draw me a picture too so I can put it up on my wall at work ♥

Cirque Du Soleil

Last week Jeremy bought tickets for Cirque Du Soleil for the both of us to make me happy because I was really stressed through out the week. So for the rest of the week I was looking forward to it.

On Sunday after Jeremy came back from work, he quickly got ready and made our way to Homebush Bay where we had a good 1 hour to spare. We were going to dine in at Ribs n Rumps but we knew we wouldn't have had enough time, so we just ordered take away and ate in the car park before going inside the venue.

We weren't allowed to take any photos so unfortunately I have no images to share with you all from that night. But I can say that it was such a great show. Every time they would do something insane, like the guy on the bicycle, riding it backwards and doing hand stands on it.. I would cringe and squeeze Jeremy's hand because I was scared for them lol. I loved how they had a live band and singer present so everything was live. The singer was amazing with her voice and the band was amazing as well.. it was as if it were all recorded.

Afterwards we headed straight home and did a little maccas run where we had our dessert, ice cream. We wish we stayed out longer and did something else but couldn't because I had work the next morning and so did our parents so we had to get back to Jaiden as early as we could.

I love having dates.  It's such a great break and to have some 'us' time since we hardly spend any time together because of work.

Chocolate Mousse Cake with Oreo Icing

For Jeremy's birthday, he requested that I make a 'moist' and 'gooey' type of cake and in the the flavour of chocolate. I chose the icing of Oreo flavour as it was different and I knew it would go really well with the cake.

Ingredients:

Cake:
  • 500g dark chocolate
  • 2 tablespoons golden syrup
  • 125g unsalted butter
  • 4 eggs
  • 1 tablespoon caster sugar
  • 1 tablespoon plain flour, sifted
Icing:
  • 226g Cream cheese
  • 1/4 cup butter, room temperature
  • 3-4 cups of icing sugar 
  • 1/2 tablespoon vanilla essence
  • 3-4 cup of Oreo (finely crushed) *

* It's best to use a food processor. If not available to you, you can use a blender, which is what I did.

Method:

Cake:
  1. Preheat oven to 220°C. Line the base of a round cake pan with baking paper.
  2. Place chocolate, golden syrup and butter together in a saucepan on medium heat. Stir together until well combined and melted.
  3. Place eggs and sugar in a large bowl. Using an electric mixer, beat on high for 10 minutes until very thick and pale. Gently fold in flour and the chocolate mixture until well combined.
  4. Pour into cake pan and bake on the middle shelf of the oven for 15 minutes.
  5. Remove from oven and run a knife around the edge of the cake. (this makes it easier to remove later).
  6. Transfer cake pan into the fridge and let it set for 1-2 hours. (I left mine for a good 2 hours).
Icing:
  1. Whip cream cheese and butter together until light and fluffy.
  2. Mix in icing sugar, one cup at a time.
  3. Add vanilla essence.
  4. gently stir in crushed oreos.
  5. Add on top of cake once cake has set.

My source of energy

On Monday night Jaiden had to be babysat because the whole of Tuesday, everyone was at work (including parents-in-law), so he was dropped off to my mums on that night.

Tuesday day came and found myself being exhausted, out of the loop, not concentrating at work, tired.. the whole 'bad day, I just want to go home' kind of day, for the whole day. I couldn't wait until I went home because I knew Jaiden would be there already, waiting for me. 

Wednesday came and despite the jagged sleep we had the night before because Jaiden was continuously tossing and turning, crying out of no where.. I was feeling so much better that day at work. I was on top of my game, as every other day. It is now the end of my Thursday and I don't feel anywhere near how I felt on Tuesday.

It didn't make sense that I was overly tired at work on Tuesday because there was no baby crying in my ear at night and I had a nights sleep. And then it hit me and Jeremy.. Jaiden's presence makes the biggest difference.

He is my source of energy. He is our source of energy.
